Sweet Potato and Apple Casserole Recipe SThis is one of my all time favorite holiday recipes handed down from my mother. It’s a great dish to take to gatherings or for an evening at home.

2 small or 1 large organic sweet potato peeled and cut into 1/4 inch medallions

2 small or 1 large organic apple any variety, sliced into wedges and optionally peeled

1/4 cup raisins

1/4 cup pecans *

1 Tbs butter

Cinnamon to sprinkle

Nutmeg to sprinkle

Maple syrup to drizzle (optional)

The amounts listed are for one layer.  Add additional layers up to three to serve a larger crowd.

Preheat oven to 350 degrees. Start by laying sweet potato medallions flat in the bottom of a lidded casserole pan. Next, arrange apple wedges in a circular pattern. Sprinkle raisins and pecans over apples. Then, dust the layer with cinnamon and about half as much nutmeg. Cut the butter into chunks and arrange around the pan. Finally , drizzle with a touch of maple syrup if desired. It will be sweet enough without the syrup. Add additional layers as needed.

Cook covered for 30 minutes until sweet potatoes are tender. Add 10 minutes for each additional layer. If taking to a party, cook 30 minutes and then another 10-15 minutes when you arrive to serve it hot.

* Pecans and all nuts should be soaked and dehydrated to disable anti-nutrients or phytates.
