2 cups cooked black eyed peas, drained (or legume of choice) Note: Homemade is best but Eden Organic is a good choice free of harmful chemicals in lining of cans.
1 cup baby spinach
½ cup onion, chopped
2 cloves garlic, chopped
1 tablespoon olive oil
Sea salt to taste
Sauté onions and garlic in olive oil over low to medium heat until tender, about 5 minutes. Add black eyed peas and continue cooking about 5 more minutes. Add spinach and stir to combine until wilted. Finish with sea salt to taste.
