I made this hummus and roasted vegetables to take to a party with my girlfriends.  It as a hit!  The taste of the roasted vegetables pairs well with this creamy hummus.  Make ahead and serve the vegetables cold or serve them right out of the oven.  Either way, this is a delicious and nutritious appetizer.

Serves 6

2 cups cooked chickpeas/garbanzo beans (reserve cooking liquid) *

3 garlic cloves

2 tablespoons olive oil

1/2 cup tahini (sesame seed butter) *

1/2 cup lemon juice, fresh squeezed

3 tablespoons reserved cooking liquid

1 teaspoon sea salt

1/4 teaspoon coriander (Other options: curry or cumin)

Red palm oil to drizzle on top

Combine cooled chickpeas, garlic, olive oil, tahini, lemon juice, sea salt and coriander or other spice in a food processor and run until well blended and smooth. Add reserved cooking liquid from chickpeas as needed to thin mixture.  Transfer to a serving bowl and drizzle with red palm oil. Serve with roasted vegetables.

Vegetables: Combine desired vegetables like bell peppers (can be peeled after cooking), cauliflower, zucchini, Brussels sprouts, carrot and onion with sea salt to taste and olive oil or coconut oil to coat. Roast at 400 degrees F for 20-30 minute or until tender. Ovens vary so stay close and watch the progress.

Red palm oil has been part of the human diet for at least 5000 years and contains pro-Vitamin A carotenes which when combined with the fat content of palm oil can be converted to Vitamin A in many adults. True Vitamin A only comes from animal products. Palm oil also contains antioxidants and many other nutrients. It has a light savory flavor that makes it perfect for enhancing other dishes!

* Chickpeas and sesame seed butter should be prepared in a way that removes plant toxins and preserves enzymes. Chickpeas should be soaked 24 hours with 2 tablespoons of lemon juice or liquid whey (the liquid you get from draining yogurt) before cooking. All nuts and seeds should be soaked in water with sea salt and then drained and dehydrated below 150 degrees F.
